M Audio stuff is generally good quality- in fact possibly better than the Behringer you are running into it.
I use a Delta 1010 and expect to be able to produce professional quality with that.

Logan,
The M-Audio interface is a good choice. I use the Delta 66 and the Omni I/O box and a DMP3 preamp with cakewalk Sonar software with excellent results. I have a Behringer mixer that I tried to use but the preamps were too noisy for the recording and created a visible and audible noise level. Do your self a favor and also get a DMP3 dual preamp (2 if you want to record 4 channels at a time). http://www.m-audio.com/products/en_us/DMP3-main.html
The Behringer stuff is cheap and way below the quality of the M-audio products. You could use the Behringer but you may hear the preamp noise when the levels are low or at the beginning and end of songs. If you don't plan to make a CD the Behringer will work ok.

This was recorded using a Rode NT1 + PUTW pickup/Behringer/Omni/Delta66

This is an acoustic blues featuring the "Weissonator"
a lap style Weissenborn shaped Tricone built by Maricopa Slim
and a German Silver Tricone built by Big Mike.

By the time the recording was converted to an mp3 the behringer is not noticeable.
