Either Dave Funk's "Tube Amp Workbook" or Gerald Webber's "A Desktop Guide to Hip Guitar Amps". They're both available from J.K. Lutherie, my employer.

Antique Electronics sells the Groove Tube book that has lots of schematics for Fender, Gibson, Marshall, Mesa Boogie, etc. It also has some general approaches to troubleshooting. www.tubesandmore.com and they sell tubes, transformers, and other tube amp parts.
