The Peavey Vegas was specifically designed for a two instrument scenario.

Ditto on then Vegas 400s. I use two (when there is room) and run the steel to a ProfexII in stereo to the a channel on each amp, and the 6 sting to a Digitech GNX2 in stereo to the b channel on each amp. I have also done the same thing using the aux in on a Walker stereo steel amp for the GNX2 guitar processor which works great too, but it's kinda nice to have EQ on all four channels w/ the Vegas. I would carry a lot less gear if I could get my head out of this stereo thing, but every time I try mono I'm wishing I would have brought the other amp!!

Depends on the amount of room.
Plenty-- two amps.
Tight but still need extra power-- Traynor Mk3(100W tube) combo w/two EVM12Ls. One in each channel.
Tight and quiet-- Fender Blues Deluxe shared, or with Mesa Studio Pre or POD into Effects loop when playing steel.

Two amps.............one Peavey Delta Blues and one Nashville 1000 or 400. But, it's worth it.

I use two amps a fender princeton with a 12 inch jbl and a nashville 400 Ive wanted to try a vibrasonic, if that is the two chanel similar to a twin with a 15 inch speaker, I just cant find a tube amp I like for steel or a solid state I like for guitar, the vegas would come close to doing it Ive actually thought about getting a pod xt for guitar and running it direct right now though I dont move any so it is no problem, the amp modeling is coming along so that may be the answer in the future

One amp, for steel and Strat. Precisely the same settings on the amp.

Works for me and my setup.

Two distinct set ups always. For steel I use a rack with an Alembic F2-B, a Lexi MPX-550 into a VHT 2/90/2. For big rooms I use a Diezel stereo 2X12, smaller ones a Bogner single 12. Sixstring-wise, I play a 1971 Tele through a Top Hat Club Deluxe for most shows, but for louder gigs I'll bring the AC-30. A veritable mountain of gear, but I am usually assured that I'll sound good at least to myself!

it would also depend on what type of guitars you are playing, if you were playing jazz you would come closer to being able to use one amp

Custom Tele's to a Fender Twin.
Rusler to a NV400.
Can't find a single amp that will do justice to both instruments.

Nice Thread there Billy, I use Webb 614-E with both channels goin, My Zumsteel is goin thru Hilton pedal then Boss DD-6 and I plug my Strat into distortion box for more grit on the classic rock stuff. One of my favorite players is Terry Kristoferson of Buck Owens band, he plays a Sierra steel and Steinberger 6 string thru a Fender Twin Reverb. Amazing and effortlessly also sings a mean note too..

I can get by with one amp, if I use my rackmounted ART Dual Tube Preamp. One channel for PSG set fairly clean, the other for Tele set with much more tube gain & less solid-state gain. Both outputs plugged into Peavey LTD 400 w/ JBL speaker. May use a couple of Boss pedals between the Tele and the preamp. (The "heavier" option is to use the Peavey for steel, and Deluxe Reverb for guitar).
